This delicious Italian Recipe - Linguine pasta in a simple sweet pepper pesto and cream sauce with grated Parmigiano is the perfect main dish to remind you of Italy.

TOTAL TIME: 45 MINS
INGREDIENTS
1 Packet liguori linguine pasta (500g)
2 tablespoons extra virgin olive oil
1 onion chopped finely
250g-500g shrimps (or any flaky fish or clams)
1-2 dashes of pepper
¼ teaspoon salt
1 bottle sweet pepper pesto
Whip & cook (as desired)
INSTRUCTIONS
1. In a medium-sized pan, add the olive oil and gently fry the onions until glazed.
2. Add shrimps and fry for 1 minute.
3. Add sweet pepper pesto.
4. Add whip & cook as desired.
5. Boil water in a separate pot with coarse salt – add pasta & stir occasionally.
6. Cook between 10mins. (al dente) and 20mins (soft cooked)
7. Drain pasta leaving a small quantity of water aside.
8. Add pasta and a small amount of water to the sauce mixture.
9. Salt and pepper
10. Sprinkle grated Parmigiano Regianno cheese on top!
